About us

Who we are, what this site is for, and how it pays for itself.

The Last Bite publishes explanatory journalism on baking basics, chocolate & sugar, frozen. The idea is unremarkable: take a subject people are expected to already understand, and set out how it actually works, at the length that takes.

What we cover

The site is organised into 5 sections:

  • Baking Basics — Flour, leavening, oven heat — the variables that decide whether a bake works.
  • Chocolate & Sugar — Tempering, crystallisation and the narrow temperatures both depend on.
  • Frozen — Ice cream, sorbet and everything that is really a lesson in water and air.
  • Pastry — Lamination, doughs and the cold-hands rules that are not superstition.
  • Sweet History — Where a dessert came from, and what it displaced when it arrived.

Sweet and baked only, global. Nothing savoury and nothing Indian-specific. Keeping the remit narrow is deliberate; a title that covers everything covers nothing well.

How we work

Our standard is simple: a piece should be accurate, it should be complete enough to act on, and it should be honest about its own limits. An article that leaves out the awkward part is not finished.

Our full editorial policy sets out how pieces are researched, reviewed and corrected.

How this site is funded

We pay for this with advertising. It is worth being plain about what that does and does not mean — advertisers have no say in the editorial, they see nothing before you do, and no article here is paid placement. Anything that ever is will say so at the top.

Who publishes it

The Last Bite is published by Soni Publishing, a business owned and run by Ritika Soni, registered in Pune, Maharashtra, India. It has been publishing since 2021.

The registered address appears on our contact page and in our terms and conditions. The quickest way to reach the editorial desk is the form on the contact page, or editorial@thelastbite.online.
